Potatoes Oil Salt Rosemary (or other herb/seasonings)
Preheat oven to 450 degrees.
Thinly slice potatoes. Use enough to cover a cookie sheet. We get huge potatoes from Nate's grandpa so we only use two. I would guess you might want more. Any kind will work. Place them all in a single layer on a cookie sheet. Drizzle 2 T. oil on them. Mix them, up so they are all well coated and the pan gets greased too (or else you can just put the slices in an already greased pan and very carefully drizzle the oil so it is even or just mix the oil potatoes and spices in a bowl or plastic bag. I like to set them all out on the tray first just so I know if I have too much or too little) Place them again in a single layer. Salt them and sprinkle with rosemary. You can use other spices or herbs instead. I tried Cajun seasoning and liked that quite a bit.
