Brownie Ice Cream Cake

Brownie Ice Cream Cake

I got this idea from my friends Leslie & Marisa. Thanks for the instructions, Marisa. I did a little tweaking and improvising. :) And, yeah, I totally need to learn better cake decorating skills. I just barely bought a little kit and the tip was way too skall for what I was planning on doing.

1 half gallon of ice cream (like mint chocolate ship, cookies 'n' cream, chocolate chip, etc.)
About 25 Oreos, crushed
2 T. melted butter or margarine
Hot fudge or Hersey's syrup
Prepackaged brownie mix for 9x9 pan
1 container Cool-whip thawed

Take the ice cream out of the frezzer and let it soften.
Mix Oreo crumbs with melted butter.
Using a 10 inch cake pan (or, Marisa suggested using a  springform pan,  but I don't have one, so I improvised), line bottom of pan with plastic wrap. Leave plenty of extra hanging over the edges of pan.
Press crumb mixture into bottom and sides of pan. Add softened ice cream and spread evenly.
Drizzle hot fudge on top.
Refreeze.
Make brownie mix as directed on package, except pour into a greased and floured 10 inch cake pan, not a square dish. I made mine to be more cake like.
Let brownies cool. Very carefully loosen sides from the pan and flip pan upside down on a plate.
When it is about time to eat, remove ice cream/Oreo cake from freezer and lift out of pan with the plastic wrap. Place it on the brownies, so that the Oreo bottom is now the top of your cake. It should look like this.

Next, spead the Cool whip on the cake. You can also add some other crushed Oreos.
Cut with a knife and eat up! This is pretty rich (I think so anyway), so don't cut too big of slices.

I didn't get a good shot of just a slice, so we'll make do with this one of Alexander enjoying his slice.
